We've used the yummy and sweet Smug AF Bellini Mocktail as a base, and added in some festive cheer with tart cranberry and pomegranate flavours. It is guaranteed to be a winner at any Christmas brunch or breakfast celebration.
The famous Harry’s Bar is the location for the creation of the Bellini. This well-known establishment was a haunt of many a famous face back in the day, including Humphrey Bogart, Ernest Hemmingway and Truman Capote, who adored the Venetian bar and the views over the grand canal.
The original Bellini champagne cocktail was invented by Giuseppe Cipriani in 1948. Harry’s Bar would often use seasonal local ingredients and used fresh white peaches, alongside Prosecco, to create a beautifully simple cocktail. The blush pink hue of the classic Bellini reminded Cipriani of a beautiful sunset painting created by Giovani Bellini, so he named the cocktail after the local artist.
Ingredients: (makes 2 non-alcoholic Christmas Bellinis)
Smug AF Bellini Mocktail Can x 1
Unsweetened 100% cranberry juice- 40ml
Unsweetened 100% pomegranate juice - 40ml
Lime juice of 1/2 a lime
Frozen cranberries and rosemary sprigs for garnish (substitute raspberries if you can't find cranberries)
1. Mix the cranberry, pomegranate and lime juices together and pour into two champagne flutes
2. Top each glass with Smug AF Bellini
3. Sprinkle a few frozen cranberries (or raspberries) into each glass
4. Garnish with a sprig of rosemary
